Story So Far

  • Disney announced the Diamond Horseshoe would close to table-service dining in May 2026 to make way for Jessie’s Roundup, a Toy Story activation for Cool Kids’ Summer, with dining service expected to resume in the fall.
  • Jessie’s Roundup opened early at the Diamond Horseshoe on May 24th, running through September 8th, 2026.
  • Earlier this month, Disney revealed a first look at the fall pop-up’s menu, including a charcuterie board and two drinks, with a full menu and opening date still to come at that point.

Jessie’s Roundup wraps up September 8th, and the pop-up now has a confirmed start date and a full menu to go with it. Disney has not announced a closing date, so how long the pop-up will run remains unclear.

Diamond Horseshoe Pop-Up | Food

The small plates menu leans into shareable frontier fare. A charcuterie board previewed earlier this month remains with cured beef, candied bacon, smoked pork, green chile cheese, smoked cheddar, and pickles. Three new plates join it. Glazed sticky ribs come with cowboy beans and jalapeรฑo crisps. Queso fundido arrives topped with barbecue burnt ends and warm tortilla chips, and sweet golden corn fritters are served with cilantro ranch dressing and red chili honey. A chipotle chicken tostada rounds out the savory options with queso fresco, lime crema, and pickled cactus salsa. There’s also a mini hot dog platter, wrapped in pastry and served with tortilla chips and queso.
