REVIEW: Mac and Cheese Food Truck Offers Tasty Dishes at Disney Springs

    The Mac and Cheese Food Truck debuted today at Disney Springs and we were on hand to bring you a review of the entire menu.

    First, here is a look at the the menu and prices:

    Barbecue Brisket Macaroni & Cheese – $11

    First up we have the Barbecue Brisket Macaroni & Cheese. As someone who often has a side of mac and cheese with their southern food, this seemed like a natural fit. I’m happy to say it didn’t disappoint. A nice portion of soft brisket sits atop a bed of the already solid mac and cheese. The BBQ was solid and the smoked gouda cheese was a nice touch. This one is more middle of the road as far as a recommendation goes. It’s a nice dish that does a lot of things right, but you might find something more interesting as you make your way through the review.

    Bacon Cheeseburger Macaroni & Cheese – $10

    This was the surprise of the group. As someone who doesn’t put ketchup on their mac and cheese, much less mustard, everything seemed to work pretty well here. A very noticeable hamburger flavor came through thanks to classic elements such as the ketchup, mustard, tomato, and shredded lettuce.

    Despite the menu listing American and Cheddar cheese, I didn’t pick up on it over the standard mac and cheese base. This dish is definitely the most interesting in the lineup and the different elements work well enough to earn a recommendation from us.

    Lobster and Shrimp Macaroni & Cheese – $13

    This was, without a doubt, the highlight of the offerings and one that we’ll be coming back for. A plentiful amount of shrimp are scattered in a mac and cheese that has shredded lobster and swiss cheese throughout. The cheese was exceptionally creamy compared to the other dishes. The shrimp were cooked wonderfully and soft. The cheese had a slight lobster flavor that we really enjoyed. That said, it didn’t have an overly “seafood” taste. We can definitely recommend this dish!

    Chicken Parmesan Macaroni & Cheese – $10

    A pretty good portion of chicken can be found atop this dish with croutons scattered throughout. There was something off on this one. I think the marinara, while good on its own, overshadowed the mac and cheese. The chicken itself wasn’t terribly high quality, sliding closer to the standard chicken tender taste more than anything else. Even big fans of chicken parm might have a difficult time enjoying this dish. It’s interesting, but you can do better at the Disney Springs Mac and Cheese Food Truck.

    Six-Cheese Crunchy Macaroni & Cheese – $8

    The six-cheese crunchy mac and cheese is as close to a “standard” mac and cheese as you can get. As a matter of fact, you can ask for it without the cheese puffs to make it a plain mac and cheese. You’re going to find a predominantly mac and cheese flavor here. I don’t think that the cheetos added much to the dish and it’s a safe pass.

    Overall, the new Mac and Cheese food truck had some great selections and we were pleasantly surprised! Let us know which ones you are interested in trying out!
