Docking Bay 7 New Menu Review: Walt Disney World Has a New #1 Quick Service Menu Item

Docking Bay 7 Food & Cargo in Star Wars: Galaxy’s Edge has a revamped menu, with most entrees new as of this month. We made it out to Batuu today to give the new menu items a try, and I was surprised to find my new #1 dish at a Walt Disney World quick-service restaurant! Here’s a look at what’s new, and our review of the hit-or-miss new menu at Docking Bay 7.

Docking Bay 7 New Menu Review

Earlier this month, Docking Bay 7 Food & Cargo in Star Wars: Galaxy’s Edge underwent a menu revamp. Most of the entrees on the menu are new, and with May the 4th crowds now gone, it was the perfect day to head out and give the new menu a try.

In fact, while the new menu was tied to the May the 4th celebrations, these items are now part of the menu and do not have an end date.

Docking Bay 7 Food and Cargo is a quick-service restaurant located inside Star Wars: Galaxy’s Edge at Disney’s Hollywood Studios in Walt Disney World.

Walt Disney Imagineering designed the project in collaboration with the Lucasfilm Story Group, with Imagineer Scott Trowbridge supervising the project and Asa Kalama and Chris Beatty serving as executive creative directors. The land encompasses 14 acres and is set in the village of Black Spire Outpost on the remote frontier planet of Batuu.

One of the primary sources of inspiration for Docking Bay 7 was Tokyo’s Tsukiji Fish Market, which was the largest wholesale fish and seafood market in the world until it closed at the end of 2018. Disney’s Imagineers have spoken of the “celebratory chaos” and “aged rawness” of Tsukiji as qualities that translate well to the Star Wars setting.

Within the story of Galaxy’s Edge, Docking Bay 7 Food and Cargo operates out of an old hangar bay and landing platform on Merchant Row in Black Spire Outpost. Food and cargo delivery shuttles land atop the building and lower supplies to the businesses below, and guest chefs visiting the planet set up temporary kitchens to cook and serve out of the location. The current proprietor is Chef Strono “Cookie” Tuggs, who previously honed his craft in the kitchen of Maz Kanata on Takodana before traveling the galaxy.

In terms of the recent menu update, there are three new items and one slightly modified item. We only ordered the new items, skipping the Endorian Fried Chicken Tip Yip, given how closely it matched the description of the previous item of the same name. The sides changed a bit.

Ok, we’re going to review the items from worst to best, with the best being our new #1 favorite quick-service item at all of Walt Disney World!

Endorian Chicken Tip-Yip Salad | $14.99

Guava BBQ Chicken with Avocado-Jalapeño Dressing, Arugula, Radish, Romaine, Cucumber, Red Onion, Haricot Vert, Pineapple, and Rice Noodles

This was actually our most anticipated item given the description of the Guava BBQ Chicken and Avocado-Jalapeño Dressing. Unfortunately, it was the worst of the three new items, and something that I wouldn’t recommend unless there are changes made to the dressing. In fact, the dressing flavor simply wasn’t there, which was a surprise given that it sounds delicious. With no flavor, the salad was just wet.

That said, the Guava BBQ Chicken was delicious and paired wonderfully with other toppings such as the pineapple and red onion. If I’m honest, the rice noodles were a little difficult to navigate and only really served as an obstacle to getting to the chicken.

Shaak Pot Roast with Kublag Mash | $19.99

Birria Pot Roast with Turmeric-Garlic Mash and Roasted Carrots

The Shaak Pot Roast was a good, middle-of-the-road option. It didn’t blow our minds with flavors (we were hoping for a touch more birria), but it did execute well on the fundamentals. The pot roast itself was tender – perfectly cooked and easily manageable with a fork, with no need for a knife.

The pot roast honestly tasted like pot roast. There was no extra zip to the flavoring, and at $20, we expected there to be a bit more. Beyond that, the Turmeric-Garlic Mash was extremely accessible. Like the pot roast, Disney played the flavor here more traditionally. You’ll walk away feeling like you had a slightly garlic, slightly peppered mash potato.

Perhaps the biggest loss of the new menu is that the lovely Crispy Yuca fries have been replaced as a side with these new mashed potatoes. They’re not worth ordering as a standalone side for $5.49, but they work with the rest of this dish. Our carrots were not cooked enough and even had a bit of a hard snap to them, but I don’t think that’s how the kitchen wants them presented.

Sweet Puffer Pig Ribs with Portion Bread | $16.99

Pork Ribs brushed with Tangy BBQ Sauce and served with Macaroni & Cheese and Sponge Cake

We’ve made it to not only my favorite dish from the Docking Bay 7 menu update, but my favorite dish at any Walt Disney World theme park quick-service restaurant. These tangy, somewhat sweet ribs fall right off the bone. I’ve never had more perfectly cooked ribs at Walt Disney World, and I’ve had a lot. The exterior features a slight char that can get crunchy in places, but overall, the meat is wonderfully soft. The herbs and crumbs on top offer a wonderful texture and flavor, and I’m not a fan of breadcrumbs on just about anything.

When you combine the delicious ribs with the solid mac and cheese base with a noodle shape straight off of the Star Wars: Galactic Starcruiser, and a delicious, slightly sweet sponge cake, you have a dish that is at the very top of my theme park quick-service must-dos.

Before this, the high-water mark was Satuli Canteen, but we have a new dish claiming the top spot. This singular dish could easily be a top BBQ option at Regal Eagle and would easily be the best thing on the menu at Roundup Rodeo BBQ, just steps from Batuu.

I don’t often take photos of food after the camera is done eating and I have begun, but I was shocked at just how easily the meat slid off the bone here. The first photo below is a slice through the meat with a standard Disney butter knife, followed by some photos of the meat divorced from the bone in a single bite.

I would not hesitate to order this menu item in the future, and I’m even trying to figure out the best way to convince my friends to head out to Disney’s Hollywood Studios soon so I can enjoy the Sweet Puffer Pig Ribs with Portion Bread again.
